- 4 medium-sized potatoes (baked or boiled)
- 2 cups broccoli florets (steamed)
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk (whole or 2%)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- ¼ teaspoon paprika (optional for garnish)
-
Prepare the Potatoes:
If using baked potatoes, preheat the oven to 400°F (200°C), wash the potatoes, and poke holes with a fork. Bake for about 45-60 minutes or until tender. If boiling, peel and boil the potatoes until tender, then drain. -
Steam the Broccoli:
While the potatoes are baking, steam the broccoli florets until tender but still bright green, about 4-5 minutes. Set aside. -
Make the Cheese Sauce:
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a paste (this is called a roux). Slowly whisk in the milk, ensuring there are no lumps. Cook the mixture, stirring constantly, until it thickens (about 5 minutes). -
Add the Cheese:
Once the sauce thickens, remove it from the heat and stir in the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth. -
Assemble the Dish:
Cut open the baked or boiled potatoes and fluff them with a fork. Pour the cheesy sauce over the potatoes and top with steamed broccoli. If desired, sprinkle a bit of extra cheese on top. -
Garnish and Serve:
Optionally, sprinkle with paprika for a little extra color and flavor. Serve hot.
