Ingredients of Banana Walnut Pancake with Fruit Medley

 

  • 1 large mango
  • 1/4 cup blueberry
  • 2 tablespoon granulated sugar
  • 1 1/3 cup low fat milk
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon salt
  • 1 teaspoon virgin olive oil
  • 1/4 cup strawberry
  • 1 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1/2 cup mashed banana
  • maple syrup as required

How to make Banana Walnut Pancake with Fruit Medley

  • Step 1 Chop the fruits

    Peel the mango and then slice the fruit into chunks. Also, cut the strawberries and blueberries into pieces. Mix all the fruits well and set aside.

  • Step 2 Mix the dry ingredients

    In a bowl, mix flour, sugar, baking powder and salt.

  • Step 3 Make the batter

    In another bowl, mash the banana well and mix in milk, egg, and chopped walnuts. Now add the dry ingredients mixture to this mixture and mix well. If the mixture seems too thick, add a little bit of milk.

  • Step 4 Make pancakes

    Heat griddle or skillet, preferably nonstick, until medium hot. Brush it properly with oil. Pour the batter into the pan, using 1/4 cup per pancake. Cook the pancake for about 2 minutes, then flip it and cook for up to 1 minute or until golden in colour. Make more such pancakes with the leftover batter.

  • Step 5 Ready to be served

    Serve the pancakes with the prepared fruit medley and drizzle them with maple syrup or honey, if desired.
