Goat Meat Koftas Recipe

This party recipe is prepared using goat/lamb meat, onion, garlic, olive oil, cumin powder, mint and parsley leaves, and sea salt. These koftas are best set in the refrigerator and are pan fried for 4-5 minutes. With a crispy texture, these koftas are soft from inside and just amazing in taste. - 500 gm minced lamb
- 2 cloves garlic
- 1 teaspoon chilli flakes
- 2 tablespoon mint
- black pepper as required
- 2 tablespoon virgin olive oil
- 1 onion
- 2 teaspoon cumin powder
- 2 tablespoon parsley
- sea salt as required
- 1/2 cup plain greek yogurt

Step 1 Saute onion and garlic
To prepare these koftas, take a small pan and place it over medium flame. Once the pan is warm enough, add a tablespoon of olive oil in it and add finely chopped onions and garlic, sauté till they are tender and the raw smell of garlic goes away. Next, add cumin seeds, salt and chilli flakes and cook for 2 minutes. Make sure that you keep stirring, so that not to burn the onion and garlic. Turn down the flame and set it aside to cool about 5 minutes.

Step 2 Prepare the meat mixture
Now, take minced meat in a bowl and add sauteed onion mixture, chopped mint and parsley leaves along with a drizzle of olive oil and a pinch of salt and black pepper. Mix well with your hands.

Step 3 Shape the mixture in koftas and set them in refrigerator for 20 minutes
Roll the meat mixture into small balls and then flatten them, about half-inch thick. Place them on a plate drizzled with a little oil, and drizzle some oil on the tops of the patties as well. Cover and chill for about 20 minutes in the fridge for setting the koftas.

Step 4 Pan fry the koftas for 4-5 minutes
Place a pan over medium-high flame. When the pan is hot, take out the koftas from the refrigerator and place them in the pan. Cook each side for about 4-5 minutes, turning once halfway through so that both sides get a nice brown colour and the koftas are done.

Step 5 Make mint-flavoured Greek yoghurt and serve hot
Blend the mint leaves in Greek yoghurt and serve these koftas warm with it with green tomato, cucumber and lettuce salad on the side.
