Matar Kulcha Recipe
Matar kulcha is our all-time favorite chaat. And nothing is better than preparing this delicious recipe at home and enjoying it with your loved ones. Matar kulcha can be a good breakfast option as well as a brunch recipe. Matar and kulcha are two different things that you can prepare at home and enjoy. Matar or white peas are used to make delicious matar that is paired with soft and fluffy Kulcha. It is very easy to make and can be served at festivals and special occasions like birthdays, anniversaries, potluck, buffet, and game night. Follow the step-by-step recipe and indulge in a delicious meal.
Ingredients of Matar Kulcha
- 2 tablespoon refined oil
- 1/2 teaspoon garlic paste
- 1 teaspoon coriander powder
- 1 teaspoon chaat masala
- 1/4 cup tamarind juice
- salt as required
- 1 teaspoon cumin seeds
- 1 teaspoon peppercorns
- 2 green chilli
- 2 1/2 cup all purpose flour
- 1/2 teaspoon baking powder
- water as required
- 1 teaspoon nigella seeds
- 1/2 teaspoon ginger paste
- 1/4 teaspoon turmeric
- 1 teaspoon red chilli powder
- 1 teaspoon cumin powder
- 1 cup water
- 250 gm white peas
- 1 teaspoon fennel seeds
- 1/2 inch cinnamon stick
- 1/4 cup mint leaves
- 4 tablespoon yoghurt (curd)
- 1/4 teaspoon baking soda
- 2 teaspoon sugar
- 2 1/2 tablespoon ghee
How to make Matar Kulcha
Step 2 Prepare masala
In the grinder add cumin seeds, fennel seeds, whole black peppercorns, cinnamon stick, cardamom, green chillies and mint leaves. Grind them all together to make a coarse paste.
Step 3 Cook the matar
Heat 2 tbsp oil in a pan and add ginger-garlic paste and turmeric powder. Stir them and add coarsely ground coriander, red chilli powder, chaat masala and cumin seeds. Cook the spices for a minute and then add boiled white peas in the pan. Now, add the ground masala we made earlier to the pan along with the peas and mix well. After mixing the ingredients add tamarind water and salt to taste in the pan. Mix all the ingredients and after some time add about a cup of water in it. Allow the ingredients to cook for 8 minutes. Then, turn off the heat and transfer the Matar in a bowl.
Step 4 Prepare the dough for kulcha
Mix the maida, salt, sugar, baking powder and baking soda in a bowl along with curd, oil and water. Mix them and knead it into a dough. Cover the dough with a wet kitchen towel and let it rest for 2 hours.
Step 5 Cook the kulcha and serve with matar
After that, make small balls and sprinkle some nigella seeds i.e. kalonji on them and flatten them with a rolling pin. Heat a griddle or a tava and place the kulcha on it. Flip it and cook on all sides. Apply a little ghee on both sides and cook till they become crispy. Serve hot with matar.
