Pottalam Biryani Recipe
Pottalam Biryani, also known as Banana Leaf Biryani is a classic South Indian biryani recipe, which is steamed and served on banana leaves. South Indian people usually have their meals on banana leaves to get that extra flavor. Also, eating banana leaves is considered healthy and auspicious in South India. Pottalam Biryani has a lot of spices and flavor to it. Ingredients of Pottalam Biryani
- 1/2 tablespoon ginger paste
- 1/4 teaspoon garam masala powder
- chopped coriander leaves as required
- 1 cinnamon stick
- 2 green cardamom
- 1 1/2 small thinly sliced onion
- 2 chopped green chilli
- 4 banana leaves
- Pinch turmeric
- 1/2 tablespoon garlic paste
- 1 teaspoon biryani masala powder
- 2 spice clove
- handful mint leaves
- 1 cup soaked basmati rice
- 1 1/4 chopped tomato
- 4 boiled egg
- 1 teaspoon ghee
- salt as required
How to make Pottalam Biryani

Step 1 Marinate chicken pieces
In a bowl, add curd, garam masala, red chili powder, Kashmiri red chili, curd, 1 tbsp oil, ginger paste, garlic paste, and biryani masala. Combine all of them and then add in the chicken pieces. Make sure you wash and clean the chicken pieces. Also, the pieces should be coated well with the marinade. Keep it aside for at least an hour.

Step 2 Cook the soaked rice
In a pan, add 1 1/2 liter water and then add cloves, cardamom, mint leaves, and some coriander leaves. Let it come to a boil and then add soaked rice. Season it with salt and also add 1/4 tsp oil. Cook the rice for about 8-10 minutes. Once cooked, drain the water and keep it aside.

Step 3 Fry onions
In a pressure cooker, add oil and fry onions. Once done, keep them aside and then add green chilies followed by tomatoes. Saute them well and then add in marinated chicken pieces. Cook for about 10 minutes.

Step 4 Layer up the biryani
Now, add a layer of cooked aromatic rice along with a layer of fried onions and a layer of mint and coriander leaves. Lastly, add in ghee and some drops of turmeric mixed in water. Pressure cook for 5-10minutes.

Step 5 Serve the Pottalam Biryani on banana leaves.
Next, take banana leaves and add the biryani along with chicken pieces and eggs. Divide the biryani into four leaves, and seal it like a pot with a thread or part of the leaf. Steam it for 5-8 minutes and serve hot with papad, sambar, or package. Enjoy this ravishing meal.
