Ingredients of Dahi Vada
- 1 cup moong dal
- 1 teaspoon ginger
- 1 cup hung curd
- black salt as required
- 1 handful chopped coriander leaves
- 1 cup refined oil
- 2 green chilli
- 2 cup cold water
- 1 teaspoon sugar
- 1 teaspoon cumin seeds
- 3 tablespoon tamrind chutney
How to make Dahi Vada
Step 1 Make moong dal paste
Wash and soak moong dal overnight and grind to a fine paste by adding very little water. The batter should be thick enough to make the vada. Beat the batter very well till light and fluffy. Add green chillies and ginger in it and mix well. Make small balls with it and shape in the form of tikkis.
Step 2 Deep fry the vadas and soak them in cold water
Put a kadhai over a high flame and heat oil in it. Meanwhile, flatten the top of the ball with wet fingers and drop slowly into the hot oil. Deep fry on medium heat for some time and then fry on low heat till golden brown. Remove these deep-fried vadas into a plate with a kitchen towel. Finish making vadas with the rest of the remaining batter and put them in water as you did for the earlier batch. Now, take a bowl of cold water and let them soak for about 30 minutes.
Step 3 Prepare Dahi Vada and serve fresh
Prepare sweet curd by mixing hung curd with sugar in a bowl. Now, gently press the soaked vadas between your palms squeeze out the water, and lightly crush them. Place them on a plate and add sweet curd over them. Add tamarind chutney over them and garnish with black salt, roasted cumin seeds, and coriander leaves.
Tips
- Traditionally, Dahi Vada is made with urad dal, so make sure that you soak it overnight or for 7-8 hours. We have made a healthier version with moong dal.
- Make sure that you use hung curd for making Dahi Vada. You can also use homemade yogurt.
- Traditionally, Dahi Vada is just made using tamarind chutney and fresh yogurt. However, for more flavors, you can add a little green chutney over it.
- For making those perfect Vadas, make sure that the dal batter has a dropping consistency.
