How to make Black Mutton Curry

  • Step 1 Marinate mutton pieces

    To begin with this easy recipe, wash and clean the mutton pieces with some lukewarm water. then rinse it again with normal water and pat dry. In a bowl, add turmeric, yogurt, green chutney, salt, and mutton pieces. Mix everything well and then keep it aside for 20 mins.

  • Step 2 Cook mutton

    Now, in a pressure cooker, add some oil and sliced onions, sauté and add the marinated mutton. Add 1 cup of water and then mix well. Cook it for one whistle on a high flame and then reduce the gas flame. Cook it for about 10 mins.

  • Step 3 Prepare the masala

    Heat 1 tbsp oil in a pan and add all the whole spices except bay leaf and caraway seeds. Saute them for a while and add remaining onion. Saute it till it turns slighlty brown in color. Now, add desiccated coconut and saute it for a while. Once done, grind the masalas using water into a coarse paste.

  • Step 4 Combine rest ingredients

    Now, again heat oil in a pan and then add caraway seeds and bay leaf. Saute it for a few seconds and then add garlic and ginger followed by chopped onion. Saute till it turns slightly brown in color. Add potatoes and some water. Mix everything well and cook it for about 2 mins.

  • Step 5 Add mutton pieces

    Once done, add mutton pieces. Mix everything well and cook it again for about 2 mins. Now, add the prepared ground paste and cook again for 2 mins. Lastly, add kasoori methi and tamarind extract and mix everything well. Cover and cook for about 2-3 mins. Switch off the gas flame.

  • Step 6 Your Black Mutton Curry is ready

    Garnish the mutton curry with a mint leaf. Your Black Mutton Curry is ready. Serve it hot with your favorite Indian bread.

Tips
  1. You can also cook the mutton in a deep non-stick pan.
  2. Make sure the spices are ground to a coarse paste so that they get coated well on the mutton pieces.
