  • 500 gm mutton

  • 2 sliced thick onion

  • 1 sliced tomato

  • 1 inches cinnamon

  • 5 green cardamom

  • 1 handful chopped curry leaves

  • 1/2 tablespoon coriander powder

  • 1 teaspoon garam masala powder

How to make Mutton Sukha

  • Step 1 Marinate the mutton pieces

    After removing the mutton fat, soak the mutton chunks in some lukewarm water with a pinch of turmeric and salt. Then drain the excess water. In the meantime, mix all the whole spices and grind them together in a blender. Marinate the mutton pieces in this for 1 to 1 1/2 hours.

  • Step 2 Boil the marinated mutton pieces

    Put a pan on medium flame and add water. Once the water starts boiling, add the marinated mutton pieces and boil until half-cooked. Add red chilli powder, coriander powder, cumin powder, garam masala powder and salt.

  • Step 3 Fry the dal & saute with the spices

    Cook till the mutton pieces are tender and water has almost evaporated. Keep aside. Heat oil in a different pan. Fry the dal until golden. Add cinnamon, cardamom, cloves and star anise. Fry for a minute or two.

  • Step 4 Add onion, green chillies, tomatoes, curry leaves & mutton

    Add the onions and green chillies. Fry until onions are golden brown. Add the tomatoes and curry leaves. Cook for another 2 minutes and add the mutton pieces.

  • Step 5 Cook until oil separates & the dish becomes dry

    Now add pepper powder and increase the flame to high. Cook until oil starts to separate and the mixture becomes dry. Transfer it to a serving dish and serve hot with rice or roti.

  1. Consider making fresh ginger garlic paste for marinating the mutton.

How to make Karahi Gosht

  • Step 1

    Boil meat with 2 cups of water and ginger and garlic paste on a medium flame. When the water dries up and meat is almost tender then turn off the flame.

  • Step 2

    Heat oil in a wok and put in onions. Fry till golden and then add tomatoes. Fry till the oil separates.

  • Step 3

    Now add 1 tsp salt, 1 and 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1 tsp coriander powder and 1/2 tsp cumin powder.

  • Step 4

    Add the meat, fry for 20 minutes on high flame till water from tomatoes dries and a little gravy is left. Add little water and cover the lid. Cook on very low flame for 10 minutes till the oil separates. Finally add green chilies and coriander leaves and fry for a minute or so. Serve hot.

Step 1

How to make Mutton Kofta

Step 1 Prepare the mutton mixture

Boil the mutton for koftas in a pressure cooker with a little salt and 1 cup water. Once the mutton is soft and if any water remains, dry it on low flame. Now add 1 tsp each ginger-garlic paste, red chilli powder, 1 tsp curd, besan, a pinch of turmeric and mix well. Use your hands to knead the koftas so that they become soft. Now make round, smooth balls. You can add more besan if the mixture is a bit too moist. Keep the koftas aside.2

  • Step 2 Shallow fry the koftas

    Heat oil in a non stick wok or pan and slowly drop the koftas and fry them on low flame till golden. Put in an absorbent paper and keep aside.

  • Step 3 Prepare the gravy

    Next, put a kadhai on medium flame and heat 4- tablespoons of oil in it. Add cinnamon, cardamoms, clove and heeng (asafoetida). When the spices start spluttering, add the grated onion and cook till it turns pink. Now add the garlic paste and sauté till the raw smell disappears. At this point add ginger, red chilli powder and turmeric along with salt and mix well. Keep the flame low or the spices will burn. Now beat the curd well so that no lumps remain and add it to the spice mixture. Keep stirring it continuously or the curd will curdle. Now add 1 to 2 cups waterdepending on how thick you want your gravy. Now add the garam masala. Keep stirring till the gravy comes to a boil.

  • Step 4 Add the spices to the gravy

    Add the bay leaves in the gravy (you can also add them right at the beginning where you are adding the whole garam masalas). Slowly drop in the koftas now. Keep the flame low.

Step 5 Allow the koftas to simmer

Lower the flame and allow the koftas to simmer for another 6-7 minutes. You will see a thin layer of oil on top which means the gravy is ready. Serve it hot with rice or butter naan.mutton kofta

How to make Chha Gosht

  • Step 1 Marinate the mutton pieces

    To prepare this enticing recipe, in a bowl take the mutton pieces, add ginger and garlic paste with crushed cloves, cinnamon, bay leaves and cardamom. To this mix add a small portion of yogurt and rub onto to meat to marinate it well. Refrigerate for at least 5 hours.

  • Step 2 Saute spices and onions

    Now, over medium flame heat oil in a pan. Once heated, add to it coriander powder, asafoetida, red chilli powder, green chillies and chopped ginger. Saute the spices for 4-5 minutes. Now add in the chopped onions. Saute until onions change colour.

  • Step 3 Add in the gram flour and meat

    Once done, add in the gram flour and cook while stirring continuously. Ensure that the mix does not burn. Now add the marinated mutton with turmeric powder. Stir cook for a while.

  • Step 4 Add yoghurt and cook for an hour before serving

    Finally, add the yoghurt and cook on a slow flame for about an hour. Adjust the seasoning and serve hot

How to make Coriander Mutton

  • Step 1 Wash the mutton and keep it aside

    Wash mutton properly, beat curd and marinate the mutton with curd, red chilly powder and salt. Keep it for an hour.

  • Step 2 Make a paste and fry onions

    Make a paste of ginger, garlic and green chilly by grinding it in a mixer. Now chop onions and take a cooker, add oil in to it fry the onions till golden brown.

  • Step 3 Add marinated mutton and stir well

    Now pour marinated mutton in it and stir well. When its half cooked, add ginger, garlic, green chilly paste. Then add half of coriander, cook for some time and stir well.

  • Step 4 Garnish with some leaves and garam masala

    Cover the cooker and cook for some time again then add some leaves for garnishing and garam masala. Close the Cooker and cook the mutton again for some time on a slow flame.

  • Step 5 Final garnishing with some coriander leaves

How to make Awadhi Mutton Biryani

  • Step 1 Make caramelized onions

    Heat ghee in a pan, and add onions. Then add salt followed by sugar. Let the onions cook and get caramelized, stir occasionally. Once done, keep them aside. Meanwhile, soak saffron in milk.

  • Step 2 Cook the mutton pieces

    In a cooker, heat ghee and then add deep-fried onions followed by mutton pieces into it. Cook it till the raw smell of the mutton disappears. Take a bowl and add yogurt, ginger paste garlic paste, turmeric powder, red chili powder, cumin powder, and biryani masala. Mix everything well and then add this to the mutton pieces. Now, add 2 cups of water and pressure cook the mutton to two whistles on low flame. It should be 3/4 cooked.

  • Step 3 Prepare rice

    To prepare the rice, bring eight cups of salted water to a boil and then add black cardamom, soaked rice, and one bay leaf to the cooker. Cook it for one whistle. The rice should be half cooked.

  • Step 4 Layer up the biryani

    In a handi, add bay leaves to the bottom followed by half of the rice. Top it with some soaked saffron in milk and then add mutton pieces. Again add the remaining rice. Sprinkle nutmeg powder and then add half of the caramelized onions. Sprinkle rose water on the top and then cover the lid. Cook it for at least 30 mins on low flame and keep an eye on the biryani.

  • Step 5 Your Awadhi Mutton Biryani is ready

How to make Mutton Goli Biryani

  • Step 1 Form meat balls

    In a bowl, add minced meat, ginger paste, garlic paste, beaten egg, breadcrumbs, 2 tbsp cornflour, salt, and pepper. Mix everything well. Form small meatballs and freeze them for an hour. Now make a cornflour slurry by mixing some water with 2 tbsp cornflour. Dip each meatball in the cornflour slurry to coat them well. Once done, fry the meatballs in the oil until crispy and keep them aside. Meanwhile, soak saffron in milk.

  • Step 2 Prepare the rice

    Now, heat ghee in a deep non-stick pan and add black cumin, cloves, cardamom, and cinnamon. Stir to mix well and then add rice. Season it with salt and add 4 cups of water. Let it come to a boil. Once it comes to a boil, lower the gas flame and then let the rice cook for about 10 mins. Switch off the gas flame.

  • Step 3 Layer the rice

    In another pan, add half of the meatballs followed by half of the rice. Pour half of the soaked saffron milk and half of the deep-fried onions on top of it to form a layer. Once done, add the other half of the meatballs followed by the leftover rice. Finally, add the rest of the soaked saffron and onions. Cover the pan and let it cook for 10 mins.

  • Step 4 Your Mutton Goli Biryani is ready to serve

    You can further seal the non-stick pan with some dough and keep it on low heat for an hour or serve immediately. Your delicious Mutton Goli Biryani is ready. Enjoy the meal.

Tips
  1. If you wish to get the classic biryani aroma, it is recommended to give it a ‘dum’ by sealing the pot with some dough and then cooking the biryani for some time.
